Ingredients (Serves 2–3):
- 1 tbsp vegetable oil
- 2 tbsp green curry paste (store-bought or homemade)
- 400ml coconut milk
- 300g chicken breast or thigh, sliced thinly
- 1 cup mixed vegetables (e.g., eggplant, zucchini, bell peppers, green beans)
- 4–6 kaffir lime leaves, torn
- 1 tbsp fish sauce (or to taste)
- 1 tsp palm sugar or brown sugar
- A handful of Thai basil leaves
- 1 red chili, sliced (optional, for garnish)
- Cooked jasmine rice (for serving)
Instructions:
- Heat oil in a pot over medium heat. Add the green curry paste and sauté for 1–2 minutes until fragrant.
